Het recept 'Sneetje Champignons' aangeleverd door Hans Brinkhoff is zeer geschikt voor brunch of lunch.
Hans, een oude rot in het vak, maakt van de gelegenheid gebruik om een herinnering op te halen aan zijn tijd aan de Hotelschool in Maastricht.
It's been 50 years since I attended the Hotelschool in Maastricht, The Netherlands. The school, including kitchens and a restaurant, was situated in the center of the city.
The dorms were located in a castle in a suburb of Maastricht. Often we stayed in town after school, to study in our favorite pub, testing beer and wine. Uncle Harry, the Innkeeper, made a perfect snack to keep us going either studying or drinking. He used a local product, mushrooms grown in the hills around Maastricht.
The snack was called ‘Sneetje Champignons‘ in Dutch, which I have translated to ‘Toast Maastricht’ to give credit to the city of Maastricht, well-known for her mushrooms, for the best Hotelschool in Europe, and for being the birthplace of André Rieu.
INGREDIENTSBy Hans "DeBrink" Brinkhoff
4 slices whole wheat bread
2 gloves minced garlic
8 oz sliced fresh mushrooms
1 cup chopped red onions
¼ cup scallions or chives
1 cup cooked ham sliced in 1” strips
2 tbs Olive oil
Sea salt
Fresh ground pepper
½ cup tomato ketchup
PREPARATION
Sauté the onions in the olive oil, add halfway the garlic. As soon the onions are starting to brown add the mushrooms and cook for 4 minutes. Add the ham, scallions/chives and the ketchup and stir for another 2 minutes. Add salt and pepper as per your personal taste. Toast the slices of bread and divide the mushrooms over it. Ready to be served as a light luncheon plate or as a snack.

Hans Brinkhoff woont al sinds 1984 in de Pacific Northwest, hij werd uitgezoncen door de Holland Amerika Lijn. Dat hij in 2004 met pensioen is gegaan als Food & Beverage Director bij de HAL wil niet zeggen dat hij zijn koksmuts in de wilgen heeft gehangen.
